Take another look at the sentence:

Jessica has found that neither background music nor potato chips make writing her research essay any easier.

When you use neither ... nor, you must maintain parallel structure. Background music, a noun phrase, follows neither, so potato chips, another noun phrase, is all that must come after nor.
